Aliya's Favorite Sunday Pancakes (Alan & Aliya Lewine)

(they're different every time since Daddy doesn't measure)

1. Get out two big bowls.

2. Break a couple of eggs in one. Beat them with a whisk. Add a couple of cups of milk, a few drops of vanilla extract (watch it make swirly patterns) and a couple tablespoons of oil (or melted butter for a real treat) and beat until a little bubbly. Half buttermilk is good too.

3. In the other bowl, put a couple cups of flour (we use unbleached white for this), a little nutmeg, cinnamon, a couple tablespoons of baking powder, some sugar (maybe 3 tablespoons?), a pinch of salt, and mix up. Adding a little corn meal makes a nice variation, too.

4. Add the milky stuff to the powdery stuff. Stir gently and only a little. Some lumps are good. Add some sliced fruit if you want. Let sit for 5-10 minutes.

5. Use a small cup to dollop into a hot skillet or griddle. Careful-HOT! Be sure to "spill" some drops around to make tiny "baby cakes."

6. Flip when they get all bubbly.

7. Eat with butter and lots of real maple syrup.

8. Ask for seconds.

Blueberry Stuffed French Toast (Popol Family)

All I have to say about this recipe is LOVE IT! LOVE IT! LOVE IT!

12 slices white sandwich bread, crusts removed and cut into 1" cubes

1 brick cream cheese (8 oz) cut into 1" cubes

1C blueberries

12 large eggs

1/3 C maple syrup

2 C milk

Arrange 1/2 bread cubes in a 13 x 9 buttered glass dish. Scatter cream cheese, blueberries, then the rest of the bread cubes. In a bowl, wisk eggs, syrup and milk, then pour over bread. Cover and chill overnight. Bake covered with foil at 350 degrees for 30 minutes. Remove foil and bake 30 more minutes. When finished, pour sauce evenly over top baked french toast.

Sauce

1C sugar

1 1/2 T cornstarch

1C water

1C blueberries

1T unsalted butter

In a saucepan, stir sugar, cornstarch and water over moderately high heat, stirring for 5 minutes or until thick. Stir in blueberries and simmer 10 minutes or until berries burst. Add butter, stir until melted. Now, I'm really hungry!
